RECIPE
☀️Crust Ingredients:
1 1/4 cup nut flour blend (wheat flour or rice flour or bean flour works too)
2 Tbl white sugar
1 Tbl brown sugar
3-4 Tbl melted butter
1 large egg
pinch of ground sea salt @redmondrealsalt
Preheat oven to 350 degrees F. No prep required for Granola Bar™ Pan – no spray, no liners.
In medium bowl whisk flour, sugars & salt.
In small bowl whisk 3 Tbl melted butter & egg. Pour liquid into dry ingredients – use pastry cutter, whisk or fork to chop up until all ingredients are incorporated.
Scoop 1 Tbl in hand and squeeze – if it doesn’t stick together well add extra 1 Tbl melted butter. Repeat chopping butter into mix.
Scoop about 1.5 Tbl mix into each cavity in the GBP. Press mix down to cover cavity bottom.
Bake crust for 12-15 min. until edges are golden brown.
☀️Filling Ingredients:
1 cup unsweetened coconut flakes
1/3 cup dark chocolate chips
1/3 cup butterscotch chips
1 cup chopped walnuts
1/2 can sweetened condensed milk or sweetened condensed coconut milk
3 small pinches of ground sea salt
☀️Filling Ingredients:
1 cup unsweetened coconut flakes
1/3 cup dark chocolate chips
1/3 cup butterscotch chips
1 cup chopped walnuts
1/2 can sweetened condensed milk or sweetened condensed coconut milk
3 small pinches of ground sea salt
Once crust is baked no need to wait to cool – start adding layers. Sprinkle tops with coconut flakes then sprinkle chocolate chips, butterscotch chips & walnuts.
Drizzle sweetened condensed milk over each bar & sprinkle with a little salt.
Place bars back in the oven for 15-18 minutes or until the edges are clearly caramelizing and evaporated milk is bubbling a lot. If not cooked long enough bars will be gooey but when cooked enough the sugar milk will caramelize and harden.
Remove from oven & let cool completely. Place them in the freezer for 15 minutes to speed up the process. Enjoy!!!
